When the weather isn't great outside but we want BBQ food I have started to reach for the BBQ sauce. I use this sauce as a flavour enhancer. It gives our food the smokey, spicy flavour found from BBQ food. I always try to look for sauces with no junk and no gunk. Which isn't always easy but we have found one that we love. Plus using BBQ sauce means we don't have to go and cook on the BBQ. Below is a video and recipe for you.

Serves 4
Sharp Knife
Peeler Chopping
Board Saucepan
Colander Potato masher or fork
Tin opener
Frying pan
Spatula
Fish slice
Ingredients
Potato x 600g
Spring onions x 6 - 8
Carrot x 2
Parma ham x 6 - 8 slices
BBQ sauce x 2 tbsps
Salt and pepper to taste
Olive oil for frying pan
Method
Peel and chop the potato into 2 inch pieces.
Next peel and grate the carrot.
Remove the tops and the bottoms from the spring onions.
Slice the onions into half centimetre pieces.
Put water into the saucepan and add the potatoes.
Place the pan on a high heat on the hob and add salt to the pan.
Bring the pan to the boil and turn the heat down.
Leave the pan to simmer on a medium heat for 5 minutes.
Meanwhile put a frying pan on a medium to high heat.
Once the pan is hot enough add the spring onions back in.
Fry until the onions until they start to soften.
It should take around 3 - 5 minutes.
Add in the carrots and continue to fry for a further minute or so.
Slice the Parma ham and put this into the frying pan.
Fry until it starts to turn brown.
Once the Parma ham is browned remove from the heat and set aside.
By then, the potatoes should be cooked so remove these from the heat.
Drain using the colander and put back into the saucepan.
Add a little olive oil and mash the potatoes, spring onions, carrots and Parma ham.
The potatoes maybe a little harder so if you have a ricer use that to mash the potatoes.
If not keep going it will turn to mash eventually.
Once they are well mashed add the BBQ sauce and mix it into the mash.
Dampen your hands under the tap.
Then using your hands, evenly shape eight cakes and put them onto the plate.
Put the plate into the fridge for 2 - 6 hours or overnight.
Preheat the oven to 180°C or gas mark 6.
When the oven has preheated put the potato cakes onto the baking tray and put into the oven.
Bake for 15 - 20 minutes or until they turn golden brown.
While they are cooking fry the eggs
Then fry the fish cakes in batches of two or four depending on the size of your fish cakes.
Serve and enjoy.

BBQ Potato Cakes with Fried Eggs was a delicious meal. I served ours with broccoli but you could have this meal with salad or green beans. You could make this meal in advance and freeze the potato cakes. Personally I prefer the cakes made fresh and stored in the fridge overnight. These also made yummy leftovers the next day too.
