To be honest, it hasn't been the best summer in the UK so far. One hour it raining and we are reaching for sweaters and jeans. The next it's sunny and there isn't a could in the sky. We are never guaranteed good weather but it would be nice to have at least a great week of sunshine.
As we aren't getting summer anytime soon I thought I would make an ice cream to remind us of it. Tropical fruit combine with mint would be a good way to cool off. Instead you can eat it to remind you of the few hot summers we have had over the last few years. It's creamy and delicious and definitely a summer dessert. Below is a video and recipe for you.

Equipment
Blender
Measuring jug
Teaspoon
Ice cream scoop
Ingredients
Frozen Mango x 250g
Frozen Pineapple x 250g
Coconut cream x 2 - 4 tablespoons
Mint x 1 small handful
Coconut water x 25mls (or maybe even more)
Method
Put the frozen mango, frozen pineapple, coconut cream and coconut water into the blender.
Blend these ingredients together until it's smooth and resembles sorbet.
You may need to add a little more coconut water but do this a little at a time.
Once the ingredients look like sorbet stop the blender.
Scoop out with the ice cream scoop into bowls.
Then serve and enjoy.

5 Minute Tropical Fruit and Mint Sorbet was a very tasty dessert. It was very easy to prepare and blend. I would make it and eat it immediately. It is not a dessert I would refreeze at the strawberries have already been frozen. We ate it in bowls but it would be good eaten in an ice cream cone too.
