Pour in coconut oil and unsweetened almond milk. Knead until smooth dough forms, then cover it and set aside for 15-20 minutes. Microwave the cauliflower rice for about 5 minutes, then squeeze out the excess moisture with a cheesecloth or a paper towel. Roll out the dough into a disk. Place two-thirds of the cheese on top.
