Keto Empanadas

These Keto Empanadas are a savory delight! Seasoned meat filling is encased in a dough made from almond flour, cream cheese, eggs, and mozzarella cheese. Shaped into semi-circles and baked until golden and crispy, they're a delicious low-carb alternative to traditional empanadas. Perfect for a snack, appetizer, or meal on the go!

Ingredients:
For the filling:
1 pound ground meat (beef, chicken, or turkey)
Your favorite seasoning blend for the meat
1 tablespoon olive oil (if needed)
For the dough:
2 1/2 cups almond flour
2 ounces cream cheese
2 large eggs
2 cups shredded mozzarella cheese
Instructions:

  1. Prepare the Filling:
    In a skillet, cook the ground meat over medium heat until browned and cooked through.
    Season the meat with your favorite seasoning blend. You can use a combination of garlic powder, onion powder, paprika, cumin, salt, and pepper, or any other spices you prefer.
    Once cooked, remove the meat from the skillet and set it aside to cool.
  2. Make the Dough:
    In a nonstick pan, combine the almond flour, cream cheese, eggs, and shredded mozzarella cheese over low heat.
    Stir continuously until the cheese is melted and all ingredients are well combined, forming a dough-like consistency. This may take a few minutes.
    Remove the dough from the heat and transfer it to a flat surface lined with parchment paper.
  3. Shape the Empanadas:
    Divide the dough into equal portions, depending on how large you want your empanadas to be.
    Roll out each portion of dough between two sheets of parchment paper to form a circle or oval shape, about 1/4 inch thick.
  4. Fill and Seal the Empanadas:
    Place a spoonful of the cooked meat filling onto one half of each dough circle.
    Fold the other half of the dough over the filling to create a semi-circle shape.
    Press the edges of the dough together to seal the empanadas. You can use a fork to crimp the edges for a decorative touch.
  5. Bake the Empanadas:
    Preheat your oven to 375°F (190°C).
    Place the sealed empanadas onto a baking sheet lined with parchment paper.
    Bake in the preheated oven for 15-20 minutes, or until the dough is golden brown and crispy.
  6. Serve and Enjoy:
    Once baked, remove the empanadas from the oven and let them cool slightly before serving.

Notes:
You can customize the filling according to your preferences by adding vegetables like onions, peppers, or spinach.
