For the first time when I said that I am going to make paneer rolls nobody was interested in my house as it is a veg preparation. But after serving it took 30 minutes to finish up the plate. It is a very easy and no fuss recipe. It can be served as snack or can be packed in lunch box or can be served as breakfast. Vegetables can also be added to make it more healthy. Ingredients: - White Bread – 10 slices
- Paneer or Indian Cottage Cheese – 1½ cup (Grated)
- Boiled Potato – 1 (Grated)
- Fresh Coriander – 2 Tbsp (Finely chopped)
- Green Chilii – 1 / 2 (Finely chopped)
- Black Pepper Powder – 1 tsp
- Roasted Cumin Powder – 1 tsp
- Salt – To taste
- Garam Masala Powder – ½ tsp
- All Purpose Flour – 2 Tbsp
- Water – As required
- Olive Oil or Butter – To brush on the rolls
Steps: - Mix all purpose flour and water in a bowl to make a thick slurry.
- Cut the corners of the bread slices.
- Roll each bread slice using a rolling pin till it is slightly flattened.
- Mix Paneer, potato, chopped coriander, green chili, black pepper powder, roasted cumin powder, salt and garam masala in a bowl.
- Keep a small amount of filling at one side of the bread piece and apply the flour slurry on the opposite side. Now roll it carefully and secure the side. Roll it on a flat surface and keep aside.
- Keep the roll in a plate covered by a moist cloth. Prepare all the rolls in the similar manner.
- Heat a flat bottomed pan. Brush the rolls with olive oil or butter.
- Place the bread rolls in the pan and cook for few minutes, until slightly browned from all sides, turning them from time to time.
- Remove from pan and serve immediately with ketchup and/or coriander chutney.
