There are two reasons this is my favourite recipe to make, favourite to eat is a totally different question. Roast beef and Yorkshire pudding is our families favourite meal, specifically the Yorkshire pudding. When I first started making it from recipes in cookbooks it wasn't that good. All the recipes were basically the same, 2 eggs, flour, salt, and a liquid. The liquid was where they deferred a little, from just water to just milk and everything in-between. I spent a couple of years researching the history of Yorkshire pudding. That was in a time before the internet. The original recipe is very old, from a time when chickens as we know them were not common in England. The oldest recipe I found, yes, called for 2 eggs, but didn't say what kind of eggs. I did a little more research and found most people used duck and goose eggs for everything. One of those eggs is the equivalent of 2 chicken eggs. I tried making the latest Yorkshire pudding recipe with 4 eggs instead of the 2. What turned out was amazing, I had fantastic Yorkshire puddings. Over the years I have modified the standard recipe to include pepper, more salt, garlic powder, and onion powder. Those additions are because there things my family likes. My proof that there good is our family eating every single one that's cooked. Last meal was 24 and now I am trying to figure out how I can make 36 at one time. The 2 reasons it's my favourite recipe are simple, they love them and they now make them themselves.
