My wife had the fried rice with bbqed chicken legs, I had shrimp and mushrooms. Two of my most favourite things to eat. Shrimp I could eat every other meal, but don't because, that's not a healthy thing to do. Mushrooms on the other hand are an extremely healthy thing to eat. Mushrooms I usually have a couple of times a week. I have mushrooms on toast often and try and put them in everything I can. Putting the two of them together is what I call a treat meal.
I have looked at hundreds of recipes for each of them but I like keeping it simple. Shrimp have a great flavour and don't require much done to them, a little butter, garlic, salt, pepper, and a little lemon or lime is enough. So many recipes I have tried over the years simply over power the taste of the shrimp. If I am spending the money to buy shrimp I want to taste the shrimp not just the sauce. Mushrooms I find the same, they don't need much but one thing they love is soy sauce. Soy sauce enhances the meaty flavour of mushrooms, it doesn't hurt the shrimp either.
12 mushrooms cut in half
15 large shrimp
2 tablespoons butter
4 cloves garlic minced
Salt and pepper to taste
1 green onion chopped
2 teaspoons lemon juice
1 tablespoon soy sauce
1 tablespoons water
Preheat a non-stick frying pan on medium heat. Add the water and mushrooms, cook for about 3 minutes mixing often. Add the butter, salt, pepper, garlic and cook 2 minutes mixing often. Add the shrimp, cook for about a minute and a half. Turn the shrimp over, add the green onions and cook for about 1 and a half minutes. Add the lemon juice, soy sauce, toss and serve.
