BBQ Chickpea Burgers

Now that the kids are back to school it's time for easy evening meals. Burgers are a great meal to prepare in advance. Chickpea burgers are quick to cook as well. It's a perfect dinner for those parents that don't have a lot of time during the week. Plus I know my little family loves anything dressed up in a bread roll. This was a delicious dish we had to share with you.

Serves 4

Equipment needed

  • Large saucepan
  • Colander
  • Food processor
  • Teaspoon
  • Tablespoon
  • Scales
  • Baking tray

Ingredients

  • Dried chickpeas x 300g or 2 tins
  • Baking powder x 1 tsp
  • Salt x 1 tsp
  • BBQ sauce x 2 tbsp
  • Carrot x 1
  • Salt and pepper to taste

Method

  • Put the the dried chickpeas into the large bowl, if you haven't already then cover in enough water and then a couple of inches above.
  • Soak the beans in the fridge overnight.
  • You may want to use a bowl with a lid.
  • The next day remove the beans from the fridge and pour any excess water through the colander.
  • Rinse under the tap.
  • Put the beans into the large saucepan.
  • Again pour enough water to cover the beans plus a two inches above.
  • Add in the baking powder and salt to your taste.
  • Turn the hob onto high and bring to the boil.
  • When the pan starts to boil turn the heat down to low.
  • Leave to simmer until most of the water has disappeared.
  • Then drain through the colander and rinse under the tap.
  • Set to one side.
  • Peel and grate the carrot
  • Place the chickpeas into the food processor.
  • Or Open the tinned chickpeas and drain through the colander.
  • Now place them in the food processor.
  • Add in the BBQ sauce and grated carrot.
  • Add all the other ingredients and blend together until a smooth consistency forms.
  • You may need to add a little water to combine the ingredients together.
  • Remove the blade and take a handful of the mixture to make it into a burger shape.
  • Put the burger onto a plate.
  • Repeat the process until you have made four burgers.
  • Place the plate into the fridge for at least two hours or overnight.
  • Preheat the oven to 180ÂșC or gas mark 5.
  • Now put the burgers onto the baking tray.
  • Put the tray into the oven and cook for 25 - 30 minutes or until golden brown.
  • To serve with chips and a salad.
  • Then enjoy.

BBQ Chickpea Burgers was a delicious dinner. It was easy to prepare and cook. As I mentioned earlier the burgers can be made in advance of the meal. All the ingredients in the burgers can be frozen and eaten on another occasion. These also made a yummy leftover lunch the next day too. However you decide to eat this dish, as always, please enjoy.
