BEEF AND BROCCOLI STIR FRY

Ingredients:

  • 1 lb beef sirloin or flank steak, thinly sliced
  • 4 cups broccoli florets
  • 2 tbsp avocado oil or olive oil
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 1/3 cup soy sauce (or coconut aminos for a soy-free option)
  • 2 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp chili flakes (optional, for heat)
  • 1 tbsp sesame seeds (optional for garnish)
  • Salt and pepper to taste
  • 2 tbsp water (or beef broth)
  • 1 tsp xanthan gum (for thickening, optional)

Instructions:

  1. Prepare the Beef: Slice the beef thinly against the grain to ensure tender pieces. Season lightly with salt and pepper.
  2. Blanch the Broccoli: In a large pot, bring water to a boil and quickly blanch the broccoli florets for 1-2 minutes. Drain and set aside. You want the broccoli to be bright green and still slightly crisp.
  3. Stir-Fry the Beef: Heat 1 tablespoon of avocado oil in a large skillet or wok over medium-high heat. Add the beef slices in batches (to avoid overcrowding) and stir-fry until browned and cooked through, about 2-3 minutes per side. Remove from the pan and set aside.
  4. Sauté Garlic and Ginger: In the same skillet, add the remaining tablespoon of oil. Add the minced garlic and ginger, stirring frequently until fragrant, about 30 seconds to 1 minute.
  5. Make the Sauce: Add soy sauce, sesame oil, rice vinegar, and chili flakes to the skillet, stirring to combine. If you'd like to thicken the sauce, sprinkle in the xanthan gum and stir continuously. Add 2 tablespoons of water or beef broth to loosen the sauce.
  6. Combine Beef and Broccoli: Add the beef and blanched broccoli back into the skillet. Toss everything together until well-coated in the sauce. Let it cook for another 2 minutes, allowing the flavors to meld.
  7. Serve: Remove from heat and garnish with sesame seeds if desired. Serve hot and enjoy! You can pair it with cauliflower rice for a complete keto meal.
