Delicious tender beef and mushroom onion gravy with mashed potatoes 😋
This turned out so damn delicious, I have to note what I did here... for my family. I used the ninja foodi to sear and pressure cook beef first. Then, in cast iron skillet, I made mushroom gravy and added beef to it. Served with mashed potatoes (that I made ahead) and a vegetable. Many vegetables would go well as a side with this.
Ingredients:
2-3 lb chuck roast/beef
Seasonings (favorite all purpose, or salt, pepper, garlic powder, onion powder)
2 cups beef broth
2 tbsp healthy fat, to saute onions and mushrooms
1/2 -1 medium onion, diced
8 oz (at least) mushrooms, sliced
1/4 cup flour
3-4 tbsp butter
1 tsp Knorr's beef bouillon
1 tsp Better than Bouillon vegetable base
Splash of worchestershire sauce
Optional - garnish like parsley or green onion, chopped
Directions:
Season beef well and sear in ninja foodi. Add 2 cups of beef broth and switch to pressure cooker, 390° for 50 minutes.
When done, pour liquid/broth from PC pot into a large measuring cup or container, stir Knorr's beef bouillon and vegetable base into broth, and set both beef and broth aside.
In skillet (I like cast iron), on medium heat, sauté onions and mushrooms with a tbsp or 2 of fat (healthy oil, butter, bacon fat, tallow, or I used fat skimmed off top of pressure cooker liquid). Add butter to the skillet, let melt mostly, then sprinkle flour over vegetables and stir, allowing flour to cook a minute or so. Stir in the broth, let cook a couple of minutes and thicken. If it's too thick, add a little water. If too thin, make a slurry by mixing a couple of tbsp each of corn starch and cold water in a cup or jar, stir into gravy. Add a splash of worchestershire sauce. Check for seasoning. Break up beef with tongs, add to gravy, and allow to warm through.
Delicious! Serve over mashed potatoes or noodles, like wide egg noodles or pappardella. Garnish with parsley or green onion. Any vegetable would be good as a side. On this occasion, I just wanted to finish leftover refried beans.
