Crock Pot Low-Carb Soup

Ingredients:

  • 1 lb ground beef (or ground turkey)
  • 1 small onion, chopped
  • 1 bell pepper, chopped (any color)
  • 3 cloves garlic, minced
  • 1 can (10 oz) diced tomatoes with green chilies (drained)
  • 4 cups beef or chicken broth (check for low-carb options)
  • 1 package taco seasoning (make sure it's sugar-free and low-carb)
  • 1 tsp chili powder (optional for extra spice)
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • 1/2 cup heavy cream (or coconut milk for dairy-free)
  • 1 cup shredded cheddar cheese (optional for topping)
  • 1/2 cup sour cream (optional for topping)
  • 1 avocado, sliced (optional)
  • Fresh cilantro for garnish

Instructions:

  1. Brown the Meat:
    • In a large skillet, cook the ground beef (or turkey) over medium heat until browned and crumbled. Drain any excess fat.
    • Add the chopped onion, bell pepper, and garlic to the skillet, sautéing until the vegetables are soft and fragrant (about 5 minutes).
  2. Add Ingredients to Crock Pot:
    • Transfer the browned meat and sautéed vegetables to your Crock Pot.
    • Stir in the diced tomatoes with green chilies, beef (or chicken) broth, taco seasoning, chili powder, cumin, paprika, and oregano.
  3. Cook on Low:
    • Set the Crock Pot to low and cook for 6-8 hours, or on high for 3-4 hours, allowing the flavors to meld together.
  4. Add Creaminess:
    • About 30 minutes before serving, stir in the heavy cream (or coconut milk if dairy-free). This will give the soup a creamy, rich texture.
  5. Serve and Garnish:
    • Once the soup is ready, ladle it into bowls.
    • Top with shredded cheddar cheese, sour cream, avocado slices, and fresh cilantro, if desired.
