Recipe : Keto Pancakes
INGREDIENTS
1/2 c. almond flour
4 oz. cream cheese, softened
4 large eggs
1 tsp. lemon zest
Butter, for frying and serving
DIRECTIONS
In a medium bowl, whisk together almond flour, cream cheese, eggs, and lemon zest until smooth.
In a nonstick skillet over medium-low heat, melt 1 tablespoon butter. Pour in about 3 tablespoons batter and cook until golden, 2 minutes. Flip and cook 2 minutes more. Transfer to a plate and repeat with remaining batter.
Serve topped with butter.

To avoid this, make sure to use almond flour (as opposed to almond meal), and look for the finest grind possible. You can even sift your almond flour, if there are some coarser bits that you'd like to remove.
What can I top these pancakes with?
Most typical pancake toppings aren't allowed on the Keto diet, but that doesn't mean you can't take your pancakes to the next level. Try sprinkling on some toasted unsweetened coconut, drizzling them with melted unsweetened peanut butter, or topping with a handful of berries. You could also consider cooking your toppings into the pancakes: try sprinkling on some freshly made bacon crumbles or keto chocolate chips right before you flip them.
