Since I started writing this blog I feel during the summer months I always have to explain the Great British weather system to the world. In most other countries they can eat outdoors and not have to worry that it will rain. In the UK we don't have that luxury so I always have summer meals I can cook in the oven as a back up plan.
This dish is one of those meals. When we want the smokiness of the BBQ but it's raining or to cold to go outside I've now started adding BBQ sauce to my dinners. It makes the meal so tasty and if makes us feel like it's summer. (Well nearly!) Below is a video and recipe for you.

Serves 4 - 6
Equipment
Mixing bowl
Tablespoon
Stirring spoon
Sharp knife
Chopping board
Baking tray with lid (if possible)
Ingredients
Large Chicken x 1
BBQ sauce x 4 tbsps
Honey x 2 tbsps
Tamari x 2 tbsps
Lemon x 1
Onion x 1
Salt and pepper to taste
Method
Preheat the oven to 200° and put the baking tray in.
Prepare the chicken by removing any packaging.
In a small mixing bowl add the BBQ sauce, honey, tamari and salt and pepper to taste.
Mix these ingredients together until they are well mix in.
Set to one side.
Carefully slide your hands under the skin of the chicken all the way down the back.
Now pour in the mixture and spread over the breast of the chicken using your hands or a plastic brush
Spread and leftover mixture over the top of the chicken.
Peel and cut the onion into quarters.
Put the quarters inside the chicken.
Slice the lemon in half and put this inside the chicken too.
Remove the baking tray from the preheated oven.
Carefully put the chicken into the baking tray.
To stop the chicken from burning use a baking tray with a lid.
After an hour remove the lid from the baking tray and put back into the oven for a further 15 minutes.
This will help the skin to go crispy and golden brown.
To test whether the chicken is cooked, put a skewer into the chicken and if the juices run clear it's cooked.
If it's not cooked, put the chicken back in for a further 5 minutes until it is done.
Once the chicken is cooked remove from the tray.
Leave to sit and rest for at least 10 minutes.
Carve and serve with roasted potatoes and other vegetables of your choice.
Then enjoy.

Sticky BBQ Roast Chicken was yummy. The day I made this meal it wasn't exactly the warmest summers day. Although the meal made it kind of feel like it. The dish was easy to prepare and cook. We ate it with roast potatoes and broccoli. There was leftovers that I ate the next day too. The chicken was even better the next day. Also any leftover chicken can be frozen and so can the bones too. Stock can be made from the bones and the chicken can be eaten in other dinners.
