Keto broccoli cheese balls

Ingredients:

  • 1 medium head of broccoli, cut into small florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup almond flour
  • 2 large eggs, beaten
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon fresh parsley, chopped (optional)

Keto broccoli cheese balls

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare the Broccoli: Steam or boil the broccoli florets until tender, about 5-7 minutes. Drain and let cool slightly. Finely chop the cooked broccoli.
  3. Mix Ingredients: In a large mixing bowl, combine the chopped broccoli, shredded cheddar cheese, grated Parmesan cheese, almond flour, beaten eggs, minced garlic, salt, black pepper, and red pepper flakes (if using). Mix until well combined.
  4. Form the Balls: Using your hands or a small cookie scoop, form the mixture into balls about 1-2 inches in diameter. Place the balls on the prepared baking sheet.
  5. Bake: Bake in the preheated oven for 18-20 minutes, or until the cheese balls are golden brown and firm to the touch.
  6. Serve: Remove from the oven and let cool slightly before serving. Garnish with fresh parsley if desired.

Tips:

  • Make sure to chop the broccoli finely so it mixes well with the other ingredients.
  • You can add other spices or herbs to the mixture for additional flavor.
  • Serve with a keto-friendly dipping sauce like ranch or a spicy mayo.
