Keto Cream Cheese Blintz
Ingredients:
For the Blintz Batter:
4 large eggs
4 oz (1/2 cup) cream cheese, softened
1/4 cup heavy cream
1/4 cup almond flour
2 tbsp coconut flour
1/2 tsp baking powder
1 tbsp sweetener of choice (erythritol, monk fruit, etc.)
1/2 tsp vanilla extract
A pinch of salt
Butter or coconut oil for frying
For the Cream Cheese Filling:
8 oz cream cheese, softened
1/4 cup powdered sweetener (erythritol, monk fruit, etc.)
1 tsp vanilla extract
1/2 tsp lemon zest (optional, for a fresh flavor)
1/4 cup sour cream (optional, for creaminess)
Toppings (optional):
Fresh berries (raspberries, strawberries, blueberries)
Sugar-free syrup or berry sauce
Whipped cream
Instructions:
Prepare the Filling:
In a medium bowl, combine softened cream cheese, powdered sweetener, vanilla extract, lemon zest, and sour cream (if using). Mix until smooth and creamy. Set aside.
Make the Batter:
In a blender, combine eggs, cream cheese, heavy cream, almond flour, coconut flour, baking powder, sweetener, vanilla extract, and salt. Blend until smooth and well combined. Let the batter rest for 5 minutes to thicken slightly.
Cook the Blintzes:
Heat a non-stick skillet over medium heat and lightly grease with butter or coconut oil.
Pour 1/4 cup of batter onto the skillet and swirl to spread it into a thin, even circle.
Cook for 1-2 minutes until the edges start to lift and the bottom is lightly golden. Carefully flip and cook for another 30 seconds. Remove from the skillet and set aside on a plate. Repeat with the remaining batter.
Assemble the Blintzes:
Place a spoonful of the cream cheese filling in the center of each blintz. Fold the sides over the filling, then fold the bottom and top to form a neat rectangle or roll them up like a burrito.
Finish the Blintzes:
Heat a little butter in the skillet again over medium heat. Place the filled blintzes seam-side down and cook for 1-2 minutes on each side until they are golden and crisp.
Serve:
Serve warm with your favorite low-carb toppings like fresh berries, sugar-free syrup, or whipped cream.
