Keto Crepe Rolls

Ingredients:

  • For the Crepes:
    • 4 large eggs
    • 2 oz cream cheese, softened
    • 1/4 cup almond flour
    • 1/4 cup unsweetened almond milk
    • 1 teaspoon vanilla extract (for sweet crepes)
    • Pinch of salt
    • Butter or coconut oil for cooking
  • For Sweet Filling Options:
    • Whipped cream (sugar-free)
    • Fresh berries (strawberries, raspberries, etc.)
    • Sugar-free chocolate syrup or keto-friendly sweeteners
  • For Savory Filling Options:
    • Smoked salmon and cream cheese
    • Sautéed spinach and cheese
    • Ham, bacon, or other deli meats
    • Avocado slices

Instructions:

  1. Prepare the batter:
    • In a blender, combine the eggs, softened cream cheese, almond flour, almond milk, vanilla extract (if making sweet crepes), and a pinch of salt. Blend until the mixture is smooth and lump-free.
    • Let the batter sit for a few minutes to allow any bubbles to settle.
  2. Cook the crepes:
    • Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the pan with butter or coconut oil.
    • Pour about 2-3 tablespoons of batter into the pan and quickly swirl it around to spread the batter into a thin, even layer.
    • Cook the crepe for 1-2 minutes until the edges start to lift and the crepe is set. Flip it over and cook for another 30-60 seconds on the other side.
    • Repeat with the remaining batter, stacking the crepes on a plate as you go.
  3. Add your fillings:
    • For sweet crepes, you can fill each crepe with whipped cream and berries, or drizzle with sugar-free chocolate syrup before rolling them up.
    • For savory crepes, spread cream cheese on the crepe and top with smoked salmon, or add sautéed spinach and cheese for a hearty filling.
  4. Roll the crepes:
    • Spread your chosen filling evenly across the center of the crepe, then gently roll it up into a tube shape. You can also fold the crepe into quarters or halves if desired.
  5. Serve and enjoy:
    • Arrange the crepe rolls on a plate and garnish with additional toppings such as extra berries, syrup, or herbs depending on the filling.
