Keto Mexican Chimichangas

Introduction:

By using low-carb tortillas and filling them with a savory blend of seasoned meat, cheese, and spices, you get the best of traditional Mexican cuisine without the carbs. These chimichangas are crispy on the outside, tender and juicy on the inside, and full of bold, satisfying flavors. Whether you're making them for a quick weeknight dinner or a festive gathering, these keto-friendly chimichangas are sure to be a hit!


Ingredients:

  • 1 lb ground beef (or shredded chicken)
  • 1 tablespoon olive oil
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup tomato sauce (no sugar added)
  • 1/2 cup shredded cheddar or Mexican cheese blend
  • 4 large low-carb tortillas
  • 2 tablespoons butter or avocado oil for frying

Optional Toppings:

  • Sour cream
  • Guacamole
  • Salsa
  • Chopped cilantro

Instructions:

  1. Cook the Filling: Heat olive oil in a skillet over medium heat. Add diced onion and sauté until softened, about 3 minutes. Add garlic and cook for another minute until fragrant.
  2. Add the Meat and Spices: Add the ground beef (or shredded chicken) to the skillet, breaking it up as it cooks. Stir in chili powder, cumin, smoked paprika, salt, and pepper. Cook until the meat is browned and fully cooked through.
  3. Add Tomato Sauce: Stir in the tomato sauce and let the mixture simmer for 5 minutes to thicken. Remove from heat and allow it to cool slightly. Stir in the shredded cheese until melted.
  4. Assemble the Chimichangas: Spoon the beef mixture evenly into the center of each low-carb tortilla. Fold the sides of the tortilla in, then roll it tightly from the bottom to the top, making sure the filling is secure.
  5. Fry the Chimichangas: Heat butter or avocado oil in a large skillet over medium heat. Once hot, place the chimichangas seam-side down in the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy.
  6. Serve: Remove the chimichangas from the skillet and serve hot. Top with your favorite keto-friendly toppings like sour cream, guacamole, salsa, and cilantro.
