Keto Neapolitan Fat Bombs

Ingredients:

For the Vanilla Layer:

  • 1/4 cup unsalted butter, softened
  • 2 oz cream cheese, softened
  • 1 tbsp powdered erythritol (or preferred keto sweetener)
  • 1/2 tsp vanilla extract

For the Strawberry Layer:

  • 1/4 cup unsalted butter, softened
  • 2 oz cream cheese, softened
  • 1 tbsp powdered erythritol
  • 2-3 strawberries, mashed (or 1/2 tsp freeze-dried strawberry powder for a more concentrated flavor)

For the Chocolate Layer:

  • 1/4 cup unsalted butter, softened
  • 2 oz cream cheese, softened
  • 1 tbsp powdered erythritol
  • 1 tbsp unsweetened cocoa powder

Instructions:

  1. Prepare the Vanilla Layer:
    In a small bowl, combine the softened butter, cream cheese, erythritol, and vanilla extract. Mix until smooth and creamy. Once fully combined, spoon or pipe the mixture into the bottom of silicone molds (or ice cube trays) to create an even layer. Place the molds in the freezer to firm up for about 10-15 minutes.
  2. Prepare the Strawberry Layer:
    In a separate bowl, combine butter, cream cheese, and erythritol. If using fresh strawberries, mash them thoroughly and mix them in, or if using freeze-dried strawberry powder, simply mix it in. Once the vanilla layer is firm, spoon or pipe the strawberry mixture on top, spreading it evenly. Return to the freezer for another 10-15 minutes.
  3. Prepare the Chocolate Layer:
    In another bowl, mix the softened butter, cream cheese, erythritol, and unsweetened cocoa powder. Make sure it is well combined and smooth. Once the strawberry layer has firmed up, add the chocolate mixture as the final layer. Smooth it out and return to the freezer to set for at least 30 minutes.
  4. Serve and Store:
    Once the fat bombs are fully set, remove them from the molds and store them in an airtight container in the fridge or freezer. They will keep for up to 2 weeks in the fridge or longer in the freezer.

Tips:

  • Customization: You can adjust the sweetness and flavorings to your liking. For more intense flavors, increase the amount of cocoa powder, vanilla, or strawberry.
  • Mold Options: Silicone molds are perfect for creating neat, bite-sized fat bombs, but if you don't have molds, ice cube trays work well, too.
  • Freeze-Dried Strawberries: If you want to avoid fresh fruit, which may have slightly higher carb content, freeze-dried strawberries are a great low-carb alternative.
