Keto Pecan Pie Mug Cake

Ingredients:

  • 2 tbsp butter, melted
  • 2 tbsp almond flour
  • 1 tbsp coconut flour
  • 1 ½ tbsp powdered erythritol (or preferred keto sweetener)
  • 1 large egg yolk
  • 1/4 tsp vanilla extract
  • 1/4 tsp cinnamon
  • Pinch of salt
  • 2 tbsp chopped pecans
  • 1 tbsp sugar-free maple syrup (optional, for extra flavor)
  • Whipped cream or keto-friendly ice cream (optional, for serving)

Instructions:

  1. Melt the Butter: In a microwave-safe mug or small bowl, melt the butter in the microwave for about 20-30 seconds. Swirl the butter around to coat the inside of the mug.
  2. Mix Dry Ingredients: In a separate small bowl, mix together the almond flour, coconut flour, powdered erythritol, cinnamon, and a pinch of salt. Stir until well combined.
  3. Combine Wet Ingredients: Add the egg yolk, vanilla extract, and sugar-free maple syrup (if using) to the melted butter. Whisk until fully incorporated.
  4. Stir in the Pecans: Gradually add the dry ingredients to the wet mixture in the mug, stirring until a smooth batter forms. Fold in the chopped pecans, ensuring they are evenly distributed.
  5. Microwave the Mug Cake: Place the mug in the microwave and cook on high for 60-90 seconds. The exact time may vary depending on the power of your microwave, so check after 60 seconds. The cake should be set but still moist. Be careful not to overcook it, as it can become dry.
  6. Serve: Let the mug cake cool for a minute, then top with whipped cream or a scoop of keto-friendly ice cream if desired. Enjoy warm!
