Ingredients:

  • For the Bowls:
    • 1 lb (450g) ground beef or ground turkey
    • 1 tablespoon olive oil
    • 1 cup shredded Swiss cheese

    • 1 cup sauerkraut, drained
    • 1 cup shredded cabbage (optional, for extra crunch)
    • Salt and pepper to taste
  • For the Dressing:
    • 1/2 cup mayonnaise
    • 2 tablespoons sugar-free ketchup or tomato paste
    • 1 tablespoon Dijon mustard
    • 1 tablespoon apple cider vinegar
    • 1 tablespoon horseradish (optional, adjust to taste)
    • Salt and pepper to taste

  • Instructions:
  1. Prepare the Ground Meat:

    • Drain any excess fat if needed and set the meat aside.
  2. Prepare the Dressing:
    • In a bowl, combine mayonnaise, sugar-free ketchup or tomato paste, Dijon mustard, apple cider vinegar, and horseradish (if using).
    • Mix well and season with salt and pepper to taste. Adjust the flavor to your liking.
  3. Assemble the Bowls:
    • Divide the cooked ground meat evenly among bowls.
    • Top each bowl with shredded Swiss cheese and cook for a few minutes until the cheese is melted. You can use an oven-safe dish and broil it for quicker melting.
    • Add shredded or chopped corned beef on top of the melted cheese.
