Keto Ribeye Steaks with Garlic Rosemary Butter

Ingredients:

For the Steaks:

  • 2 ribeye steaks (about 1½ inches thick)
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 1 tablespoon butter (for cooking)
  • 2 cloves garlic, smashed
  • 2 sprigs fresh rosemary

For the Garlic Rosemary Butter:

  • ½ cup unsalted butter, softened
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 teaspoon fresh lemon juice (optional)
  • Salt and pepper, to taste

Instructions:

1. Prepare the Garlic Rosemary Butter:

  • In a small bowl, combine the softened butter, minced garlic, chopped rosemary, lemon juice (if using), and a pinch of salt and pepper. Mix until all ingredients are well incorporated.
  • Transfer the butter mixture to a piece of plastic wrap or parchment paper and roll it into a log. Refrigerate for at least 30 minutes to allow the flavors to meld.

2. Prepare the Steaks:

  • Take the ribeye steaks out of the fridge about 30 minutes before cooking to bring them to room temperature. This ensures even cooking.
  • Pat the steaks dry with paper towels and season generously with salt and black pepper on both sides.

3. Sear the Steaks:

  • Heat a large cast-iron skillet over medium-high heat. Add the olive oil and let it heat until shimmering.
  • Once the skillet is hot, add the ribeye steaks and sear them for about 3-4 minutes on each side, depending on your desired doneness (medium-rare to medium).
  • For a deeper flavor, add 1 tablespoon of butter, smashed garlic cloves, and rosemary sprigs to the skillet. Tilt the pan and use a spoon to baste the steaks with the melted butter and aromatics while they cook.

4. Check for Doneness:

  • Use an instant-read thermometer to check the internal temperature of the steaks:
    • 125°F (52°C) for rare
    • 135°F (57°C) for medium-rare
    • 145°F (63°C) for medium
  • Once the steaks have reached your desired doneness, remove them from the skillet and let them rest for 5-10 minutes.

5. Serve:

  • While the steaks are resting, slice the chilled garlic rosemary butter into rounds.
  • Place a generous slice of the butter on top of each steak and allow it to melt over the hot meat.
  • Serve the ribeye steaks with your favorite keto-friendly sides, such as roasted vegetables or a fresh salad.

Tips:

  • For a deeper char, press the steaks down into the skillet while searing to create a beautiful crust.
  • Make sure to let the steaks rest after cooking. This allows the juices to redistribute throughout the meat, ensuring tender and flavorful bites.
