Salmon Patties - My family LOVES these. Delicious, so easy to make and a good use for canned salmon. I've used both regular saltines and Club crackers, whichever I have in the pantry. Some people use breadcrumbs. We prefer cracker crumbs.
Ingredients:
(Although in my house…I double this!)
1 can of canned salmon
1 egg
1/4 cup chopped onion
1/2 cup ground cracker crumbs
Sea salt & fresh cracked black pepper to taste
2 tbs healthy oil or tallow
Directions:
First, mise en place; finely dice onion, pulverize crackers in food processor (or in zip lock bag and rolling pin). Drain liquid from salmon. I like to clean skin & bones off. These bones won't hurt you but I still like to get the bulk of them off. Mix salmon, egg, onion, cracker crumbs, salt & pepper together. Form into patties. Heat healthy oil in frying pan & gently place patties in pan. Brown on each side, aprox 3-4 minutes per side, turning gently. Drain on paper towel and serve.
Many sides go well with these. I used to make fried potatoes and onions until trying to eat healthier; Okay, doing easier options, too 🤭 Salads 🥗 of course, corn 🌽, asparagus, any vegetables, really.
Here with corn, roasted asparagus, green goddess inspired salad. My granddaughter likes cajun seasoning on her corn 😉
Mine? With salad and also corn, but using Redmond Real Salt and delicious Creamy British Butter... I want to taste those ingredients on their own! 😋 🌽 🧈
I have a relative who makes tuna patties, which I'd never heard of, but... call it all fish cakes, I suppose. I think that's a good idea, but so far, every time I open canned tuna, I want a tuna fish sandwich 🤭 It's all good 😋 🐟
