There are a LOT of tuna casserole recipes! I look for one that either has my favorite ingredients or what I have in the pantry. This time was a real "make it work" one 🤣 I was stuck at home without a car. I could have paid for delivery, but I was determined to use what I had. THAT meant choices, like pasta, where it would be either too big (extra large fusilli) or too small (broken fettuccine), so I went in the middle with gemelli 😉 I cooked 3/4 of the pasta first and set aside. I have plenty of tuna 😜 I used 2 large cans. I did not have peas 😮 but I did have frozen sweet corn. I added chopped green onions, red peppers, and parsley to make up for it, plus it added flavor and color. 🤭 I did not have canned soups, so I made a ⤵️ béchamel sauce, seasoned it with celery salt, fresh cracked black pepper,and a little Redmond Real Salt... taste throughout for adjustment.
Mix vegetables in with béchamel sauce. Mix in pasta, then fold in tuna. Pour into 9" X 13" baking dish. Top with something for crispness; crushed buttered crackers, buttered breadcrumbs, crushed potato chips, or dried French fried onions. Bake at 375° for 15-20 minutes, or desired browning on top.
I had panko breadcrumbs. I melted a couple of tbs of butter and stirred into breadcrumbs. I also had parmesan cheese 🧀 😋
That actually turned out good! 😁 Yum 😋
