I just wanted to let you know that after four years of trying to stabilize my ankle, I will be undergoing a full ankle replacement surgery next week so we will not be sending out a weekly newsletter on 8/22/25.

"Wasn't able to use the slow cooker method as there wasn't enough time, so the oven method had to happen. My pork loins, bought from Costco, were quite thick, but we've had the before and they were fine. I firstly set out the sliced apple in the casserole dish, then fried the onion (cut into rings) and later added the crushed garlic (fried in Olive Oil). I added the onion and garlic to the dish. I then fried each joint on every side, to brown and seal. After putting the joints in the dish I then poured in the dry apple cider and cooked on 180 c for 1 hour 30 minutes. The joints were left to settle and the cider/onion/apple was used to make the gravy (using chicken gravy granules). Served with carrots, cabbage and beef dipping roasted potatoes. I must say, it was the nicest meal I have had in a long time. The pork had cooked perfectly in the cider and the gravy was something else and complimented the vegetables perfectly. I'll be doing this again quite soon as everyone enjoyed it. "~Eric on Apple Cider Roasted Pork Loin
