Made this recipe from Chiapas, Mexico tonight! Made with a few mods - blue corn Masa instead, baby spinach instead of chipilin (out of season & hard to find), jalapeno & Hatch green chiles (a popular local roasted chile pepper of my region in Northern New Mexico/ Southern Colorado) instead of a Serrano pepper, a bit of chopped cilantro in the dumpling dough.
