This one pot minestrone soup is sure to impress. It's a super simple whole food recipe! Minestrone is a classic Italian soup that is loaded with fresh veggies, pasta and beans. We simmered it in a deep, savoury tomato based broth to enhance all the flavours. This dish is perfect for a cool fall or winter day. We already have snow here in Ontario, which means more cozy, warm meals for us! This minestrone is loaded with whole food plant based protein and fibre to leave you feeling full and satisfied. Having the noodles in the soup makes it that much more filling.

For ours, we also served it with some toasted bread to dip into it. However, for a low carb option you can omit the toast and/or the pasta if you would like to! It is completely up to you to customize to your liking. We really hope you love this one pot minestrone soup as much as we did.
