What is your Sunday routine? Do you have one? In our house, it's a mix of productivity and pleasure. Getting ready for the week ahead... while still soaking up every last minute of the weekend. It took me a while to find the perfect balance, but now I look forward to Sunday more than any day of the week! I get all the dull drum duties done first thing (I'm looking at you: laundry, vacuuming, cleaning out the fridge) and then move on to the good stuff! Which for me, usually involves baking cookies, prepping dinner (making meatballs tonight), and diving into a good book! But let's focus on the cookies! COWBOY COOKIES! Have ya ever had them? They're kind of a chocolate chip cookie/oatmeal cookie hybrid that's loaded with pecans, coconut, a touch of cinnamon, and of course, plenty of gooey chocolate chips! My version is made with brown butter, which makes a good thing EVEN better! But maybe the best thing about this recipe? NO COOKIE DOUGH CHILLING REQUIRED! Meaning you can have these ready to go in about 30 minutes! Just assemble, roll, and bake! Personally, I like to underbake a batch or two and then toss them in the cookie jar so they stay nice and chewy for a couple of days! My one tip for baking these cookies? WEIGH YOUR FLOUR! Or at least measure it correctly: which means fluffing it up in the bag, gently spooning it into a measuring cup, and then leveling it off with the flat edge of a knife. Too much flour is the destroyer of chewy cookies, which is why I always use my handy digital scale (it's on sale right now)! But if you don't have one, just follow my flour tip above!
