Sometimes I just like to try something new for a side dish. I have been trying to get more veggies into our meals, so I wanted to make something with zucchini. Since I was making a burger, I figured, why not make zucchini fries? These Crispy Zucchini Fries are easy to make and so very tasty. They actually got my very favorite review from the youngest kiddo - "Why didn't you make more, mom?" That's basically a 10/10, 5 star, would recommend rating in our house.

You can totally make these in the air fryer, if you don't mind doing it in batches or have the full sized oven with an air fryer setting (I love mine!). You will need to adjust the cooking time to accommodate the smaller batches if using a countertop fryer. If you have the setting on your oven to do air frying, you can use the same temperature and time listed in the recipe card.
I cut these in a traditional fry shaped strip. You could totally do coins or wedges. It would really depend on if you are using one of those gargantuan home garden zucchini or the more cucumber sized ones from the grocery store. You really just want to be sure that you are cutting them with similar with thicknesses so that everything cooks evenly.
What goes better with fries than a burger? And that is exactly what I served these up with. My Chicken Cordon Bleu Burger was a perfect match. And dipping the fries in the tasty Maple Dijonnaise was so very good.

Crispy Zucchini Fries
Strips of zucchini in a light coating of panko and parmesan and baked to crispy
4 Medium Zucchini (cut into fries )
1 cup Heavy Cream
1 cup Parmesan Cheese (grated)
1 cup Panko
1 tsp Onion Powder
1 tsp Garlic Powder
1 tsp Parsley
Cooking Spray
Preheat oven to 400degF.
Make a two plate dredging station. Add the heavy cream to the first plate. Combine the cheese, panko, and seasonings to the second plate.
Cover a baking sheet with parchment paper. Dunk each zucchini fry into the cream and then roll in the panko/cheese mixture. Lay them flat on the baking sheet. Spray evenly with cooking spray.
Bake in oven for 30 minutes.
