You all know how I love to make festive meringues, so today I'm sharing the very seasonally appropriate Easter Bunny Meringues! I saw these made with buttercream icing somewhere last year as decoration for a cake, and I thought they were so cute - I had to try them as meringues. This is using the original recipe for Brown Sugar Meringues, but with white sugar instead of brown. These are so fun and so cute and so easy to make - they're just the best! Let me just say, they're so cute - I hope they last until Easter Sunday! These will make one heck of a celebration!
Here is the recipe as I made it:
Easter Bunny Meringues
Beat in a medium bowl until soft peaks form (I like to beat them to stiff peaks):
4 egg whites
Gradually beat in until soft and glossy:
1 cup sugar
Add:
1 teaspoon vanilla
Beat in:
Food coloring of your choice (I obviously used blue - it would be fun to make several colors)
Spoon into a piping bag (or a large zip-top bag - cut a corner off to fit in the tip - maybe you don't even need a tip to make the bunny shape) fitted with a large M1 star tip.
Pipe onto a parchment lined baking sheet, making the body of the bunny with 1 large rose shape for the body and 1 smaller rose shape for the head, making 2 ears on top (at this point, you could be extra festive and put a few sprinkles on)!
Bake in 250 degree oven for about 2 hours or until the meringues are firm and dry ( I have never had them go that long - start checking at about 1 hour).
Cool completely, peel gently and carefully off of the parchment paper, and store in an airtight container for up to 2 weeks. If you can. Hide them.

The original recipe says to beat the egg whites to soft peaks, but I like to make them stiff peaks to make sure they hold their shape.

After beating in the sugar, all that's left to do is to mix in the vanilla and food coloring.

I love this robin's egg blue! It would be fun to make more batches with other colors - pink, green, yellow, lavender - the more bunnies, the better!

They're so cute!

The bunnies are bigger than regular meringues, so they take up more space on the baking sheet. You also don't get as many cookies out of a batch because the bunnies are bigger.

They hold their shape well after baking, and get just a bit brown.

I love these cuties so much! Make sure you bake a lot of these because everyone - kids AND adults - will want a bunch of these bunnies! They're so ridiculously easy and fun to make - I just can't get enough of them. They're so fun! You'll be the hit of the day if you make some of these Easter Bunny Meringues for Easter Sunday!
