These simple, easy to make fajitas are great for a quick lunch. Or a main dish by pairing them with rice, or salad, corn on the cob, potato wedges, or guacamole & salsa with tortillas, anything you fancy
There are so many different mock chicken products around now, so I'd suggest using your favourite. I used a pack of "chicken breasts" by Vivera for this, but other mock chicken will work too
Yield; Four fajitas, two to four servings Cook time; 20 minutes
You'll need;
- A couple of teaspoons of oil
- 180g mock chicken
- One red pepper, deseeded and thinly sliced
- One yellow pepper, deseeded and thinly sliced
- One red onion, peeled and thinly sliced
- Spice mix; two teaspoons of smoked paprika, one teaspoon of ground coriander, half a teaspoon of ground cumin, a good pinch of cayenne pepper
- The juice of half a lime
- Four tortillas
- Salt to taste
Method;
- Start by heating a teaspoon of oil in a large frying pan. Once it's warmed up, add the mock chicken and cook as per the instructions on the packet. When the mock chicken is cooked, set it aside to cool a little before finely slicing

- Add the remaining oil back into the frying pan, then add the vegetables. Give them ten minutes to cook, stirring often
- Finally add the spice mix, mock chicken, lime juice, and season to taste with salt. I also added a little splash of water if the pan was starting to dry out. Continue cooking for another five minutes

- Once you're ready to serve the fajitas, heat the tortillas (I usually just microwave them for 30 seconds, as I find that the easiest and no moisture from the tortillas gets lost). Then fill them, adding salsa and salad leaves too if preferred, then they're ready to serve
