Today's recipe for Mincemeat Muffins is a mash-up of the recipe for Friendship Muffins and using the recipe for Tomato Mince Meat. Back in July, when I actually made the recipe for Tomato Mince Meat, I put two big containers of mincemeat into the freezer to use for the holidays. I used a portion of one of them when I made the Mincemeat-Pumpkin Pie in November. That left me a bit in the container to use for something else. I decided to try these muffins - possibly to enjoy with our Christmas morning breakfast. I had exactly 1 1/2 cups of mincemeat left, and this is what I made with it.
Here is the recipe as I made it:
Mincemeat Muffins
Mix the dry ingredients together:
2 cups flour
1 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
Then add:
1/2 cup oil (I used canola - and only 1/2 cup instead of the 3/4 cup the recipe calls for because of the moisture and extra fat in the mincemeat)
3 eggs, beaten
2 teaspoons vanilla
Add:
1 1/2 cups mincemeat (the recipe calls for 1 cup of fruit and 1/2 cup of nuts, so I just put in the remaining 1 1/2 cups of mincemeat that I had)
Bake at 375 degrees for 30 minutes.

Just mix up all the ingredients for the Friendship Muffins first.

Then I added what was left of the Tomato Mince Meat.

Quickly fold in the mincemeat and that's it.

I put the muffins in a combination of plain papers and Christmas colored papers. And you gotta have sprinkles.

If these are for our Christmas morning breakfast, they have to be festive, right?

So pretty and sooooo festive! 

These muffins taste just like a mincemeat pie! Imagine that!

I think this was a great way to use some of my Tomato Mince Meat. Making it was so much fun, though it was a bit stressful. There will be more mincemeat baked goods, if this is the norm - they are so, so good! These are going to be great for Christmas morning, or Christmas afternoon snack - and they're packed away in the freezer until we're ready for them. I don't know - what do you think? Maybe Santa would like us to leave him a few of these delicious Mincemeat Muffins!
