Rose and Chocolate Biscuits/Cookies

Roses are red, violets are blue, I love cookies and I hope you do too! I feel it's safe to start mentioning the 'C' word. Yes it's nearly Christmas and time to start thinking about what to serve and what to give as gifts. Rose petals are a traditional gift to give on Valentine's day. As much as I love tradition I also enjoy change occasionally.

Therefore instead of Christmas spices this year I have decided to use rose petals instead. Chocolate and rose seemed like a tasty combination. Biscuits or cookies are great gift to give friends and relatives. Plus chocolate is a lovely gift to give at this time of year too. The rose petals work really well and I'm sure this is going to be a new tasty way to celebrate Christmas.

Equipment

  • Nutribullet
  • Baking tray
  • Fish slice
  • Mixing bowl
  • Stirring spoon
  • Teaspoon
  • Tablespoon
  • Cup
  • Fork
  • Circle cutter
  • Scales

Ingredients

  • Gluten free oats x 200g
  • Ground almonds x 100g
  • Brown rice flour x 100g plus extra for dusting
  • Raw cacao powder x 50g
  • Coconut sugar x 100g
  • Ground sweet cinnamon or ground cinnamon x 1 tsp
  • Baking powder x 2 tsp
  • Rose petals x 4 tbsp
  • Butter or ghee x 100g plus extra for greasing
  • Maple syrup x 80mls
  • Egg x 1

Method

  • Preheat the oven to 180°C.
  • Grind the oats and rose petals in the nutribullet until they resemble flour.
  • Lightly grease a baking tray.
  • Weigh and measure all the ingredients.
  • Put the rose petals and oat flour, ground almond, brown rice flour, raw cacao powder, sugar, ground sweet cinnamon or cinnamon and baking powder into the large mixing bowl.
  • Stir all these ingredients together with the spoon.
  • Next add the butter or ghee and rub it into the mixture with your fingers until it resembles fine breadcrumbs.
  • Break the egg into the cup and beat it with the fork.
  • Add the maple syrup and mix again.
  • Now add the egg mixture to the breadcrumbs and stir with the spoon.
  • As the mixture begins to stick together, start to mix it with clean hands.
  • It might be slightly crumbly at first but keep kneading until it forms a stiff dough.
  • Sprinkle the extra flour onto a clean work surface and keeping kneading until it is completely mixed.
  • Use extra flour if the dough starts to stick.
  • Again sprinkle flour on the work surface and roll the dough very thinly.
  • Once rolled, cut the dough with the circle cutter.
  • Repeat the process until all the dough is cut into circle shapes.
  • Place all the circles onto the greased baking tray.
  • Place in the oven for 10 - 15 minutes.
  • When they are golden brown, remove from the oven and leave to cool on a wire rack.
  • Serve and enjoy.
Rose and Chocolate Biscuits/Cookies

Lavender Chocolate Biscotti were delicious and very well received in our home. As I mentioned earlier, to my pleasant surprise Howard really enjoyed eating these biscuits. For both Howard and my son Ted to like the same food would be a miracle. Sadly Ted wasn't so keen. These biscuits are delicious as a morning or afternoon treat but we also enjoy them as our dessert after dinner. We have also given them as a gift and they were well received too. However you decide to eat these biscuits, as always, please enjoy. xxx
