HAPPY JULY

Living most of my life being a Pizza addict, and a later in life type one diabetes diagnosis, has me eating pizza differently these days while keeping my blood sugars manageable and a craving under control.

Restaurant Pizza puts my blood sugar through the roof with or without insulin. Problem solving is a skill that can most times make life easier:)

I decided to try Aldi Vegan shredded 'cheese' with this Pizza creation. It tastes good, just still doesn't melt the best. I will experiment more to see how it cooks...
