Holiday Sausage Stuffing Balls
Classic stuffing flavors all rolled-up into an impressive little ball. These Holiday Sausage Stuffing Balls are 40 calories per serving, which means you can grab seconds… and thirds!

Total Time - 55 Minutes
Serving Size - 24 Servings

Ingredients
1 onion, finely chopped
1 Granny Smith apple, peeled and finely chopped
2 tablespoons butter
8 ounces JENNIE-O® Lean Sweet Italian Turkey Sausage, casings removed
2 cups toasted bread cubes
1 cup crumbled cornbread
1 teaspoon dried sage or poultry seasoning
1 cup chicken broth
4 eggs or 1 cup egg substitute

Directions
1) Heat oven to 350°F. Spray two 12-cup mini-muffin pans with cooking spray. In large skillet, cook onion and apple in butter 5 minutes or until golden brown, stirring often. Place in large bowl.

2) In same skillet, spray skillet with nonstick cooking spray. Preheat skillet over medium-high heat.

3) Place dinner sausage in hot skillet. Cook uncovered, turning occasionally, 17-19 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.

4) Drain. Crumble. Add to onion mixture.

5) Add bread cubes, cornbread, sage, chicken broth and eggs. Stir to combine. Pack stuffing into muffin cups.

6) Bake 20 to 25 minutes or until golden brown.

7) Transfer to cooking rack and let stand 5 minutes. Remove from muffin cups. Serve warm.
