Asparagus Guacamole
Serve with tortilla chips and vegetable sticks, or as a delicious accompaniment for grilled chicken or seafood.
Recipe Ingredients:
4 cups (1 pound) cut, trimmed, fresh asparagus*
1 small garlic clove, minced
2 teaspoons lime juice
1/4 cup canned diced mild green chiles
1/2 teaspoon salt
1/2 teaspoon ground cumin
2 tablespoons finely chopped onion
1/2 cup chopped, seeded tomato
Cooking Directions:
1 - Cook asparagus in small amount of water until tender. Drain well and cool.
2 - In a food processor, process asparagus and next five ingredients until mixture is smooth, about 30 seconds. Scrape bowl
3 - frequently.
4 - Remove from food processor and stir in onion and tomato.
5 - Chill thoroughly before serving.
Makes 4 servings.
*Or 2 (10-ounce) packages frozen cut asparagus.
