Weight Watchers Egg Bites:

Ingredients:

  • 4 large eggs
  • 1/2 cup fat-free cottage cheese
  • 1/4 cup shredded reduced-fat cheese (cheddar, mozzarella, or your choice)
  • 1/4 cup diced bell peppers
  • 1/4 cup diced tomatoes
  • 1/4 cup diced spinach or kale
  • Salt and black pepper to taste

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a blender, combine eggs and cottage cheese. Blend until smooth.
