Even though this fried rice dish is named "Fujian" (or "Hokkien") fried rice, it's neither Hokkien nor from Fujian - in fact, I believe it is a Cantonese dish originating from Hong Kong. A bunch of stuff including diced chicken, shiitake mushroom, and random veggies are poured on top of traditional egg fried rice, along with a thick, soupy sauce, so it's not your typical dry fried rice. I really love the contrast between the rice and the sauce though, and it's definitely one of my favourite comfort foods. Glad to have found somewhere that serves it in Wuhan!
