What you need:
- Large Flat Mushrooms
- Portobello Mushrooms
- 1 head of garlic
- 3 shallots
- 2 peppers
- 1 chilli
- Breadcrumbs
- Parsley
- Mild chilli powder
- Tarragon
- Fennel
- Rosemary
- Cinnamon
- Cayenne
- Thyme
- Sumac

...and squeeze the meat into a bowl. Pull the stalks out of the mushrooms and dice. Add some butter to a pan, then add the mushrooms, garlic and shallots. Once these are fragrent, add the meat and the remaining peppers.
While this is cooking, put the mushrooms in the oven for ten minutes to reduce the amount of moisture in it. Set aside once done.
Grab those colourful jars and add to the pan:
- A moderate amount of thyme
- A sprinkle of Sumac
- A sprinkle of Fennel seeds
- A moderate amount of cinnamon
- A moderate amount of Tarragon
- A moderate amount of mild chilli powder
- A sprinkle of rosemary
- A sprinkle of parsley
- A sprinkle of cayenne
Mix it all together then start scooping into the mushrooms. Top off with a sprinkle of breadcrumbs then back into the oven.
Take out after ten minutes and serve.
