In Korea, fish varieties in supermarkets are rather limited (see generally FISH IN KOREA), especially big fish amenable to being filleted and cooked as steaks, such as halibut, sea bass, swordfish, shark, mahi mahi. Salmon has only recently gone mainstream (see for example 12.298 Kall Inkokt Lax).
As far as I'm aware, mahi mahi is only available in Korea at Costco, portion packaged and frozen under their Kirkland brand - one of the reasons that I renewed my membership recently.
For the first application, I considered fish & chips but decided on tacos because I had fresh tomatoes and lettuce.
While I've always strived to minimize food waste, it's not really about saving money or protecting the environment, which are noble outcomes in themselves; it's more about challenging myself to maximize the use of everything that I have, such as in a curry (see for example 7.258 Beef Curry Rice). This time, with tacos in mind, I minced the end bits of tomatoes and turned them into pico de gallo.
