Meat Feast Chilli

My little family loves meat. My husband Howard and son Ted are definitely carnivores. I knew when I mentioned meat feast food they would love these ideas. Chili is traditionally a Mexican poor man's meal. It was usually made with leftovers many years ago. I felt that adding chorizo and Parma ham would add a lot of flavour to this dish. Plus it would feel authentic and how the Mexican's would eat their chili a long time ago. It's also now how we like to eat it too. Below is a video and recipe for you.

Serves 4

Equipment

  • Sharp knife
  • Chopping board
  • Large saucepan
  • Teaspoon
  • Tablespoon
  • Stirring spoon

Ingredients

  • Beans x 300g or 2 tins (optional)
  • Chorizo x 120g
  • Parma ham x 4 slices
  • Beef mince x 500g
  • Onions x 1
  • Garlic x 2 cloves
  • Carrot x 1
  • Courgette x 200g
  • Mild, medium or hot chilli powder x 1 tsp
  • Ground cumin x 1 tsp
  • Ground coriander x 1 tsp
  • Ground ginger x 1 tsp
  • Ground sweet cinnamon x 1/2 tsp
  • Dried oregano x 1 tsp
  • Tamari x 2 tbsp
  • Tomato puree x 2 tbsp
  • Bone broth or chicken stock x 250 mls
  • Salt and pepper to taste
  • Coriander x 1 handfuls
  • Spinach x 1 handful

Method

  • Peel and grate the carrot and courgette.
  • Peel, slice and dice the onion and the garlic.
  • Put all these ingredients to one side.
  • Score down the side of the chorizo and remove the skin.
  • Slice into small pieces and set to one side.
  • Next slice the Parma ham into slices.
  • Put the large frying pan or sauce pan onto a high heat on the hob.
  • Add oil to the base and leave the pan to heat up.
  • When the pan is hot add the chorizo and Parma ham to the pan.
  • Fry until they start to brown.
  • Remove this meat from the pan but try to leave the oil in the bottom.
  • Now add in the onions and fry until they start to soften.
  • Next add in the garlic and fry for a further minute or so.
  • Now add in the grated carrot and courgette.
  • Fry these ingredient for a further few minutes.
  • Add in the beef mince and fry until it starts to go a golden brown colour.
  • It should take about 5 minutes or so.
  • Once the beef is cooked sprinkle over the mild, medium or hot chilli powder, ground cumin, ground coriander, ground ginger, ground sweet cinnamon, dried oregano and salt and pepper to taste.
  • Mix these ingredients together for a further minute or so.
  • Then pour over the bone broth or chicken stock or the tamari or soy sauce.
  • Turn the heat down, if you haven't already to a medium heat and leave to simmer for about 20 - 30 minutes.
  • Chop the coriander and spinach.
  • Add at the end of the cooking process.
  • Stir in the coriander and spinach and let it wilt down.
  • Remove from the heat and serve with rice.
  • Then enjoy.
Meat Feast Chilli

Meat Feast Chilli was a huge hit in our house. We loved this meal. It was easy to prepare and cook. All the ingredients in the dish are freezable so you could make a big batch and freeze it.
