Todays my dinner is "Chiba prefecture clam dashi salt ramen" Dashimen of Kokubu group in Japan. "Dashimen"(だし麺) is a ramen dish with the flavor of "dashi"(出汁) made from domestic ingredients. The soup uses soup stock made by boiling clams from Chiba Prefecture Japan, and the flavor and richness unique to shellfish spread throughout. The noodles are aged special dry noodles with a raw noodle texture that are not fried in oil. The chewy noodles go well with the flavorful soup. To maximize the flavor of the clams, I kept the toppings simple with only seasoned eggs and green onions. Also, since the temperature was very high, I had made a chilled ramen this time.
