Garlic Butter Steak Bites with Zucchini Noodles

By deiv3 on July 27, 2024

INGREDIENTS:

1 lb sirloin steak cut into small cubes

4 medium zucchini, spiralized (or a pack of store-bought Zucchini Noodles)

1 tablespoon olive oil

3 tablespoons butter, divided

2 teaspoons minced garlic

1/4 cup beef or vegetable broth or white wine

1 tablespoon minced parsley

1 teaspoon fresh thyme leaves

Juice of 1/2 lemon

MARINADE:

1/4 cup soy sauce (or coconut amino for paleo)

1 tablespoon olive oil

1 tablespoon hot sauce (we used Sriracha)

Fresh cracked black pepper, to taste

Juice of 1/2 lemon

INSTRUCTIONS:

In a mixing bowl, combine the ingredients for the marinade (soy sauce, olive oil, hot sauce, pepper, and lemon juice) and add the steak bites. Mix well and marinate for 15 to 20 minutes minimum, while preparing the other ingredients.

Heat the olive oil in a large skillet over high heat. Drain steak from the marinade. Keep the remaining marinade for later.

Add 2 tablespoons butter and garlic to the skillet; cook for 1-2 minutes, stirring to coat the meat in the sauce. Remove to a shallow plate and set aside.

In the same skillet, add butter, lemon juice, red pepper flakes, beef broth, and remaining marinade juices. Bring to a simmer and allow to reduce for 2-3 minutes, stirring regularly.

Add the zucchini noodles and toss for two to three minutes to cook it up. Stir in the fresh parsley and thyme, then allow the cooking juices to reduce for one minute if the zucchini renders too much water. Push the zucchini noodles on the side, add the steak bites back to the pan and reheat for another minute. Serve immediately.

Garlic Butter Steak Bites with Zucchini Noodles

Ingredients

For the Steak Bites:

  • 1 pound sirloin steak, cut into 1-inch cubes
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon fresh parsley, chopped (for garnish)

For the Zucchini Noodles:

  • 2 medium zucchini, spiralized into noodles
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Prepare the Zucchini Noodles:
    • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
    • Add the zucchini noodles to the skillet and season with salt, pepper, and red pepper flakes if using.
    • Sauté for 2-3 minutes until the noodles are tender but still have a bit of crunch. Do not overcook.
    • Remove the zucchini noodles from the skillet and set aside.
  2. Cook the Steak Bites:
    • Season the steak cubes with salt and pepper.
    • In the same skillet, heat 1 tablespoon of olive oil over medium-high heat.
    • Add the steak bites in a single layer and cook for 2-3 minutes without stirring to get a good sear.
    • Flip the steak bites and cook for another 2-3 minutes until they reach your desired level of doneness. Remove the steak bites from the skillet and set aside.
  3. Make the Garlic Butter Sauce:
    • In the same skillet, reduce the heat to medium and add the butter.
    • Once the butter is melted, add the minced garlic and cook for about 30 seconds until fragrant, stirring constantly to avoid burning.
    • Return the steak bites to the skillet and toss them in the garlic butter sauce until well coated.
  4. Combine and Serve:
    • Add the zucchini noodles back to the skillet and toss them with the steak bites and garlic butter sauce until everything is well combined and heated through.
    • Garnish with fresh parsley before serving.

Tips for Perfect Garlic Butter Steak Bites with Zucchini Noodles

  1. Choosing the Right Steak:
    • Opt for a tender cut of steak such as sirloin, ribeye, or tenderloin. These cuts will ensure your steak bites are juicy and flavorful.
  2. Zucchini Noodles:
    • If you don't have a spiralizer, you can use a julienne peeler or buy pre-spiralized zucchini noodles from the store.
    • Be mindful not to overcook the zucchini noodles. They should be slightly crunchy to hold up well with the steak bites.
  3. Garlic Butter Sauce:
    • The garlic butter sauce is key to this recipe, adding richness and depth of flavor. Be sure to use fresh garlic for the best results.
  4. Serving Suggestions:
    • This dish pairs well with a simple green salad or roasted vegetables for a complete low-carb meal.
    • For added texture, sprinkle some toasted sesame seeds or pine nuts over the top before serving.
