My son Ted who is 10, loves chicken nuggets. I was unsure of making this dish as he likes his nuggets just so. To my surprise, Ted seemed keen to try these nuggets. Especially when I told him he could roll his ones in sourdough breadcrumbs. We made this meal together. It was so much fun and we really enjoyed the results of our experiment. We hope you will too. Equipment
Sharp knife
Chopping board
Bowls x 3
Baking tray
Ingredients
Chicken x 500g
Tapioca flour x 2 heaped tbsps
BBQ Sauce x 4 tbsps
Honey x 2 tbsps
Tamari x 2 tbsps
Salt and pepper to taste
Almond flour or breadcrumbs x 8 - 10 heaped tbsps
Salt and pepper to taste
Method
Preheat the oven to 200°C or gas 5.
Cut the chicken breasts into 1 inch pieces.
Put the tapioca flour into one of the bowls.
Pour the BBQ sauce, honey and tamari into a bowl.
Sprinkle in the salt and pepper to taste.
Mix these ingredients together.
Then add the almond flour into the final bowl and add salt and pepper to taste.
Mix these ingredients together.
Place a piece of the meat in the tapioca flour, then dip it into the BBQ sauce mixture and then into the almond flour or sourdough breadcrumbs.
If you want to make breadcrumbs place a piece of bread in the food processor and blend until it turns to crumbs.
Repeat the process until all the chicken has been coated in all the ingredients.
Put the nuggets onto a plate and place into the fridge until the oven is preheated.
Once the oven is preheated put the nuggets onto the baking tray and place them in the oven.
Cook for 30 minutes or until the nuggets are golden brown.
Remove from the oven and serve with chips and salad.
Then enjoy.
BBQ Chicken Nuggets
BBQ Chicken Nuggets were delicious. As I mentioned earlier Ted and I prepared these together. Then we stored them in the fridge until we wanted to eat them. If the chicken has not been frozen then you could make the nuggets in advance of a meal and store them in the freezer. They could also be made the night before and stored in the fridge. The nuggets make very tasty leftovers too. However we decide to eat this dish, as always, please enjoy. Thank you xxx
