Good morning, my friends. I hope you're well. Our forecast for today: 84°, cloudy, 90% chance of rain, winds are from the south at 3 miles per hour, and humidity is sitting at 96%.
It's definitely muggy this morning. My goodness. You can almost split the air with a knife. We need the rain, though, so I'm not going to complain. The lawn will get mowed when we get a dry day.
I managed to get the laundry done and put away yesterday. I also went ahead and put my menu together for the next week. Praise the Lord for that! The rest of the day was taking care of Mom. Her blood is too thin right now, and she was shaking uncontrollably. I helped her get dressed, did her hair, bundled her up and kept an eye on her.
Supper last night was supposed to be hamburgers, but I felt like it should be something a bit less greasy, so I made breakfast. Scrambled eggs, waffles and bacon SPAM. Definitely was not greasy. I cook the SPAM until it's crispy. That's about the only way I can eat it. I used the last of the eggs for scrambled eggs, and just put some minced onion and some of my homemade adobo seasoning in them. Added a little milk and when they were almost done cooking, I added some cheese. Since I used all the eggs for scrambled eggs, I used applesauce to replace the egg I needed for the waffles. You can substitute unsweetened applesauce for eggs in recipes. Just note that the texture will be different. For each egg you need, use 1/4 cup of applesauce.
I didn't have unsweetened applesauce on hand. I had applesauce with cinnamon in it, so that's what I used. Turned out decent, though. The waffle mix I used was a blueberry mix, so the apple and the cinnamon flavors came through.
Mom seems to be feeling better today. I checked her several times yesterday to see if she had a fever. Nope. Her temp was 96.7°. I think her blood is just too thin and that's why she was so cold. I was concerned about her, though, so any plans to go out were immediately squashed and I kept an eye on her throughout the day. She slept most of it, either in her chair or in her bed.
Today, the trash need taken out, I need to make a pet store order, and I'll have to make an emergency trip somewhere to get some dry cat food. I can also balance the ledgers, make my grocery list, and do quiet things like that. It's going to be a drizzly day today, so maybe I can crochet a little bit. I'm tempted to go get some chunky yarn and work on my own little project. Tempted. I have enough projects going right now. I don't need to add another one to the mix.
