Keto Banana Pudding Cheesecake Fluff

By deiv3 on July 28, 2024

Ingredients:

  • 8 oz cream cheese, softened
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons powdered erythritol (adjust to taste)
  • 1 ripe banana (or banana extract for a stronger flavor)
  • Optional toppings: sliced banana, crushed nuts, sugar-free chocolate chips

Instructions:

  1. Prepare the Ingredients: Soften the cream cheese by leaving it out at room temperature for about 30 minutes. Whip the heavy whipping cream until stiff peaks form. Mash the ripe banana until smooth.
  2. Mix Cream Cheese and Sweetener: In a large mixing bowl, beat the softened cream cheese and powdered erythritol until smooth and creamy.
  3. Add Banana and Vanilla: Mix in the mashed banana and vanilla extract until well combined.
  4. Fold in Whipped Cream: Gently fold the whipped cream into the cream cheese mixture until fully incorporated. Be careful not to deflate the whipped cream.
  5. Chill: Transfer the mixture to a serving dish or individual dessert cups. Cover and refrigerate for at least 1-2 hours, or until the fluff is set and chilled.
  6. Serve: Once chilled, you can serve the keto banana pudding cheesecake fluff as is or garnish with sliced bananas, crushed nuts, or sugar-free chocolate chips if desired.

Enjoy your delicious keto-friendly dessert!

Keto Banana Pudding Cheesecake Fluff

Ingredients:

  • Banana Pudding Layer:
    • 1 small box sugar-free banana pudding mix
    • 2 cups unsweetened almond milk
  • Cheesecake Fluff Layer:
    • 8 oz cream cheese, softened
    • 1/2 cup powdered erythritol (or your preferred keto sweetener)
    • 1 cup heavy whipping cream
    • 1 tsp vanilla extract
  • Additional Ingredients:
    • 1/2 cup crushed keto-friendly cookies or nuts (optional, for texture)

Instructions:

  1. Prepare the Banana Pudding:
    • In a medium bowl, whisk together the sugar-free banana pudding mix and unsweetened almond milk until smooth.
    • Allow the mixture to set in the refrigerator for about 5 minutes, or until it thickens.
  2. Make the Cheesecake Fluff:
    • In a large mixing bowl, beat the softened cream cheese and powdered erythritol together until creamy and smooth.
    • In a separate bowl, whip the heavy whipping cream and vanilla extract until stiff peaks form.
    • Gently fold the whipped cream into the cream cheese mixture until well combined and fluffy.
  3. Combine the Layers:
    • Gently fold the prepared banana pudding into the cheesecake fluff mixture until well combined.
    • If desired, fold in the crushed keto-friendly cookies or nuts for added texture.
  4. Chill and Serve:
    • Transfer the mixture to a serving dish or individual cups.
    • Refrigerate for at least 1 hour to allow the flavors to meld and the fluff to firm up slightly.
    • Before serving, you can garnish with additional crushed cookies, nuts, or a dollop of whipped cream if desired.

Tips:

  • Ensure the cream cheese is fully softened before mixing to achieve a smooth texture.
  • For an extra banana flavor, you can add a few drops of banana extract to the pudding mixture.
  • If you prefer a firmer texture, allow the fluff to chill longer or overnight.

Enjoy your delightful and creamy Keto Banana Pudding Cheesecake Fluff!
