KETO COWBOY COOKIES

Ingredients:

  • 1 cup almond flour
  • 1/2 cup unsweetened  shredded coconut
  • 1/4 cup chia seeds
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup erythritol or your preferred keto sweetener (adjust to taste)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sugar-free chocolate chips (optional)
  • 1/2 cup chopped nuts (pecans or walnuts work well, optional)
  • 1/4 cup unsweetened cocoa powder (optional for a chocolate twist)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Mix Wet Ingredients: In a large mixing bowl, cream together the softened butter and erythritol until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  3. Combine Dry Ingredients: In a separate bowl, mix together the almond flour,  shredded coconut, chia seeds, baking soda, salt, and cocoa powder if using.
  4. Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture, mixing until well combined. If using, fold in the chocolate chips and nuts.
  5. Form Cookies: Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each dough ball slightly with the back of a spoon or your fingers, as they won't spread much during baking.
  6. Bake: Bake for 10-12 minutes, or until the edges are golden brown and the centers are set. The cookies will firm up as they cool.
  7. Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
