Ingredients:

  • Salt.
  • Coconut flour: 1/2 cup.
  • Monk fruit sweetener: 1/3 cup.
  • Baking powder: 2 tsp.
  • Buttermilk: 1/4 cup.
  • Egg yolk: 1.
  • Sour cream: 1/4 cup.
  • Pumpkin purée: 1/2 cup.
  • Mozzarella cheese: 1 cup.
  • Egg: 1.

Pumpkin spice glaze:

  • Buttermilk: 2 tbsp.
  • Vanilla extract: 1/4 tsp.
  • Pumpkin pie spice: 1/4 tsp.
  • Whipping cream: 1/3 cup.

Instructions:

  1. Set the microwave temperature to 350 degrees.
  2. Almond flour, and coconut flour, and then use the nutmeg, cake flour, and salt, and then put the vinegar, baking soda, and xanthan gum in a small bowl. Put aside.
  3. Combine the pumpkin purée, soy sauce, and buttermilk to make eggs, and egg yolk in a large basin.
  4. Stir the mozzarella cheese in the vessel for about fifteen seconds.
  5. The dry components are added to the wet pumpkin mixture gradually after beating the mozzarella cheese into the wet mixture using an electric mixer.
  6. Mixing continues after consistency.
  7. Take a ball of pumpkin doughnut dough, roughly two inches in diameter, and push it onto a doughnut pan.
  8. Create each ring out of the dough.
  9. Bake for between twelve and fourteen minutes at 350 Fahrenheit.
  10. After cooking, let it cool in the donut pan for a few minutes, then move it to a wire rack to finish cooling.
  11. Combine all the components necessary for the pumpkin spice glaze and stir till thoroughly combined.
  12. Put the extra buttermilk if the combination is too thick.
  13. Each donut should be dipped in glaze and then set for serving. Split nuts can be added to the sand.
