Ingredients:

  • 1 lb (450g) ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning (make sure it's low-carb or homemade)
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup (240ml) beef broth
  • 1 cup (240ml) sour cream
  • 1 cup (100g) shredded cheddar cheese
  • 1 cup (100g) shredded mozzarella cheese
  • 1 cup (90g) sliced black olives (optional)
  • 1 cup (90g) diced bell pepper (optional)
  • 1/2 cup (50g) chopped fresh cilantro (optional)
  • 2 tbsp olive oil or avocado oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Cook the Meat: In a large skillet, heat the olive oil or avocado oil over medium heat. Add the chopped onion and cook until it starts to soften, about 3-4 minutes. Add the minced garlic and cook for an additional 30 seconds.
  3. Add Ground Beef: Add the ground beef to the skillet. Cook, breaking it up with a spoon, until it is browned and fully cooked. Drain any excess fat if necessary.
  4. Season the Meat: Stir in the taco seasoning, diced tomatoes (with their juice), and beef broth. Let it simmer for about 5 minutes, allowing the mixture to thicken slightly. Season with salt and pepper to taste.
