What you need:
- Lamb (Crazy Debbie used lamb leg steaks)
- Pasta
- Tomato paste
- Carrots
- Red onion
- Brown onion
- Shallots
- (Optional) Bell peppers
- Lemon juice
- Chicken stock cubes
- Cayenne pepper
- Black pepper
- White pepper
- Turmeric
- Cumin
- Cinnamon
- Allspice
- Cloves
- Star anise
- Bay leaves
- Cardamon pods
- Garlic granules
- Ginger
- Ground coriander
- Coriander leaf
- Oregano
- Thyme
- Rosemary
- Mint
- Sumac
Start by chopping the onions, shallots and carrots. If not already diced, dice the lamb and set aside.
Add the star anise, bay leaves, and Cardamon pods to mortar and pestel and imagine your worst enemy. Bash, bash and bash dome more till it's ground into dust then set aside.
Heat some oil in a pan then add your onions snd shallots. Heat until softened then add your spice mix from the mortar. Mix until combined then squirt some lemon juice and the tomato paste. Combine all of this together and add in the lamb and carrots. Stir the lamb until it's browned then add a bit of water to create the beginnings of a sauce.
Simmer everything for a few minutes before going in with the spices. Starting off with:
- A moderate amount of garlic granules
- A moderate amount of turmeric
- A moderate amount of cumin
- A fuckload of Allspice
- A fuckload of cloves
- A fuckload of cinnamon
- A sprinkle of cayenne
- A sprinkle of ginger
- A sprinkle of black pepper
- A moderate amount of white pepper
- A moderate amount of thyme
- A moderate amount of oregano
- A moderate amount of rosemary
- A moderate amount of mint
- A moderate amount of ground coriander
- A sprinkle of coriander leaf
- A moderate amount of Sumac
Mix to combine until a sauce forms and simmer to thicken.
Crack open the the pasta and chuck the chicken stock cubes in. Add water to fill to the top and let the pasta cook.
Check the pasta and if cooked to your preference, simmer and let the sauce thicken to your preference. If needed, make up a flour slurry with two teaspoons of flour, three teaspoons of water and three teaspoons of the sauce. Stir to combine then add a little at a time.
Once done, plate and serve.
