Vegan Blueberry Cookies

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegan butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • 1/2 cup chopped nuts (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a larger bowl, cream together the vegan butter, granulated sugar, and brown sugar until the mixture is smooth and creamy.
  4. Add the unsweetened applesauce and vanilla extract to the wet mixture. Mix well until everything is combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Gently fold in the blueberries and chopped nuts (if using) into the cookie dough.
  7. Using a tablespoon or cookie scoop, drop rounded spoonfuls of dough onto the prepared baking sheet, leaving some space between each cookie.
  8. Bake in the preheated oven for about 12-15 minutes, or until the cookies are golden brown around the edges. The baking time may vary depending on your oven, so keep an eye on them.
  9. Once baked, remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
